I have a KINDLE 8th GENERATION. When I press the power button, the options are: CANCEL, RESET and OFF SCREEN. I press OFF SCREEN and when I use the Kindle again, there is no more battery. So, I can't turn off my Kindle. How can I do that?

Kindles aren't designed to be shut off anymore, however, you can try holding down the power button, just not so long that you get the menu option (about 2 seconds or so).
If you just got your Kindle, if you downloaded a large amount of books, it can take a week or so to index the entire downloaded library, which will eat into your battery power. If it's been lomger than that, and your battery is still dying while in sleep mode (what happens when you sekect "Off Screen") uou may habe one or more books stuck in index mode.
Try this: do a search for a nonsense word, such as kjgdsfhjytrfbn. If you have a book stuck indexing you should get a list (check every category in the search results as "indexing books" may not show up in the first section of the results). Delete those books from the Kindle, then "rinse and repeat", as it were (not literally, of course), until there is no list.
