I have a Google Home Mini. And I would like to use it for audio output of Fire TV that I intend to purchase. Would that work?
Just a warning IF they say their device will work in conjunction with a Fire TV (or tv device- you don't specify which one): Although the 3rd gen Fire Stick, aka 4k Fire TV device, says it supports all kinds of different external audio modes, the reputation of it actually doing so isn't the same. Check reviews before deciding on what to get.

"Ok google, bluetooth pairing". This command will enable bluetooth pairing with Google Home Mini.
Now go to amazon fire stick setting==>bluetooth devices==>add devices. Here you will get the name of Google Home Mini.
Select the name and pair it , now your amzone fire stick tv output will come from this google home mini.
